In Entrevaux, a historic village that blends the charm of Provence with the majesty of the Alps, there’s a little blue store with the delicious scent of honey and spices. In her workshop, adjacent to the pretty store, Helena works with the nectar of the bees, the fruits of the sun, wild flowers, ancient vegetables, aromatic herbs and spices to concoct exquisitely moist gingerbreads, original miellades, subtly scented vinegars, melt-in-the-mouth cookies, tasty spreads and other delights imagined and concocted as the harvest unfolds. For the past 26 years, Helena has been reviving the craft of bread-making. As a true craftswoman, she rejects standardization and forges an authentic relationship with nature and the seasons. Choosing the best produce, picking when ripe and cooking delicious sweet and savoury specialities are the house motto. Connoisseurs come from far and wide to stock up on her sweet treats in Entrevaux’s little blue store.
